FARM FRESH SUCCOTASH W/ ORANGE ZEST
I picked up some greens and squash from the local markets a couple weeks ago. I had some leftover oranges from an event, so with some orange zest, voila, I gots me a succotash worthy of an Appalachia squirrel grill. I threw in some heirloom tomaters for color and toasted sliced almonds for some crunch.
Since I can only cook for armies, I had a shitton of leftovers…for days. I made a country version of Huevos Rancheros with fried eggs, tortillas, succotash, garlic sautéed black eyed peas, mixed greens, sour cream, and TONS o’ hot sauce. Kinda hurtful how good it was. Pic blows but you get the idea.
